Our Cheese-making day begins at dawn with fresh sheep milk taken from our very own flock found grazing only a few kilometers from the creamery. Their rich diet gives the milk an ample spectrum of aromas and flavor from the Extremadura countryside. Since exquisite cheese starts with nothing less than perfect milk, samples are taken to our lab and tested for quality, concentrating on cleanliness, high percentage of protein and low overall bacteria counts.
After testing the milk we begin various elaborations for differing cheese types, using the most modern operating systems to guarantee maximum health and hygiene standards, while preserving the cheese-making traditions passed down for centuries from generation to generation of the Extremadura ancestors.
With the drive of our young, dynamic, expert team our fresh sheep milk is magnificently transformed into our different and equally exquisite cheeses.
